We introduced our guests to something special this time — Jejudony white pork and black pork from Jeju Island, South Korea. More than just a tasting, the session shared the story behind Jejudony pork, where it comes from, how it is produced, and what makes it a premium pork brand in Korea. Raised in Jeju’s clean environment, with fresh groundwater and mineral-rich volcanic soil, Jejudony pork is known for its tender texture, clean taste, and balanced flavour. Guests also learned how different cuts from belly and jowl to loin, collar, shoulder, and ribs bring out different textures and flavours, helping chefs choose the right cut for each dish.
