It was a beautiful night at KOMA as Chef Shintaro Hozumi showcased the art of Yukimuro snow-aged cuisine. Yukimuro is a traditional Japanese method where ingredients are aged in natural snow houses. The constant cool temperature helps the ingredients stay fresh while slowly improving their taste and texture. Guests enjoyed a curated menu featuring snow-aged beef and premium Japanese ingredients. Each dish highlighted the key benefits of Yukimuro aging — more natural sweetness, softer and more tender texture, and deeper, richer flavour.
