Each course was thoughtfully designed to showcase the nuances of Galbani’s cheeses, marrying classic Italian flavors with modern techniques:
• Mozzarella di Bufala – Crostini with anchovies, capers, datterino confit, and basil
• Parmigiano – Beef Carpaccio with Mascarpone, Truffle, and Parmigiano
• Mozzarella Vaccina – Gnocchi alla Sorrentina
• Gorgonzola – Double Crunch with Parma Ham, Figs, Fig Jam, and Walnuts
