Mayura Station Tomahawk Dinner at KOMA A Special 3-Day Private Dining Experience
We’re thrilled to announce an exciting collaboration with KOMA, made even more special by the presence of our principal, who will be joining us in person to support and celebrate the event!
As part of this unforgettable experience, we’re proud to feature Mayura Station — a premium producer of world-class Wagyu beef. Based in South Australia since 1845, Mayura Station raises their cattle on rich land with a special grain-fed diet of at least 500 days, which includes chocolate! This gives the beef a unique sweetness, rich flavour, and incredible tenderness.
Under the culinary direction of Executive Chef Mark Wright, each dish was masterfully crafted to celebrate the elegance and richness of Mayura Wagyu beef. Here’s what was served:
• Crispy Hand Roll SushiTenderloin tartare, uni, caviar, gold leaf
• Wagyu Tartarewith native Australian lime
• Sirloin Neatwith seasonal garnish
• Striploin Cold Shabu Shabuwith citrus dashi, leek, pea shoots
• Smoked Tenderloin with Wagyu béarnaise sauce
• Signature Mayura Tomahawk served with mushrooms, Brussels sprouts, cherry tomato, broccoli, and a 12-year-aged master stock sauce
• KOMA Sweet BurgerVanilla cookie dough and Hokkaido ice cream patty in a sesame bun, with churros fries
